In this world there are things that are certain to bring delight–a child’s giggle, the sound of the ocean, a really good hug and of course cupcakes. In most any situation and for just about any occasion a cupcake will do the trick! There is something about these short, little cakes that bring a smile to my face. And not just my face…topped with a sugary hat, these petite treats have developed quite the cult following.

With a following of their own, Saint Cupcake opened its doors in 2005 but their recipes are not so new. Several of their delectable concoctions come from owner, Jami Curl’s gramma who still gets calls for tips and tricks. All natural ingredients pair with recipes that have stood the test of time for a magically tasty experience. Just as they would at home Curl and her team of talented bakers, whip up small batches of cupcakes to ensure only the yummiest sweets are served up.  Their shops in Oregon have many a customer that flock to the bountiful cupcake counters but that left the rest of this wonderful country feeling a little left out.

Never fear! The saints at Saint Cupcake began shipping cupcakes across the United States in 2009. Best of all you can customize your St. Cupcake Kit using their magical cupcake selector so when your cute cakes arrive on your doorstep it is a perfect package just for you. You choose your cake flavor, icing, and sprinkles and they package it up in a pretty box complete with icing wand and instructions for easy-peasy decorating. The possibilities are endless: carrot cake + cream cheese icing + chocolate jimmies? vanilla toffee + vanilla buttercream +  pink crystals? how about vegan chocolate cake + hot fudge icing + rainbow nonperrils? Are you drooling yet?

Have YOU ever had cookie-cake before? Neither had I. It takes top prize in my dessert experiences due to the combination of creativity and love that went into its preparation. Somehow the cookie mixture had too much of SOMETHING in it that caused it to rise like a cake, but with more of a cookie like consistency. Filled with leftovers from the baking cupboard (green m&ms and white chocolate chips), filled with double chocolate syrup, topped with cream cheese frosting and delivered on a cute little plate, served with a smile. Random, interesting flavor, but the sentiment and creativity give it top prize in my book.

I had my first “girls only” luncheon in January and one of my girlfriends surprised me with her husband’s carrot cake. Soooo “ono” (delicious) that just thinking about it makes me want to eat some of it right now! Both the cake and the cream cheese frosting were so tasty and light.,.it just seemed to melt in your mouth. It’s a secret recipe but his wife said he uses baby food carrots instead of fresh carrots. Delish!!

The best dessert that I have ever had was a flourless chocolate cake with chocolate ganache on top and some really fresh cut up strawberries. The cake was warm and really rich and the ganache just made it that much better. :) I’m dreaming about it now….

This may sound kinda vain, but I make the recipe on the back of the hershey’s coco box for chocolate cake, and I think it’s the best. It has so much flavor and the icing tastes what i would imagine solid warm ice cream would taste like.

A homemade zebra cheesecake for my daughter’s 10th birthday. Unfortunately, it’s now called floor cheesecake at my home because when I was moving the remaining 3/4 of the cake to a different plate for saving. Slippery plate+slippery hands=floor cheesecake. The cries then laughter from my kids and husband will ring bittersweet in my ears everytime I make it.

Oh my goodness, over the weekend I had the most amazing dessert! It was a huge, hot, buttery, melt-in-your-mouth sugar cookie topped with a delicious caramel sauce and apple pie filling with huge chunks of cinnamony apples *and then* topped with vanilla bean ice cream. Because it was served hot, the ice cream melted a little and mixed with all the other flavors, and it was just heavenly!

While I was abroad I discovered Gajar Halva, an Indian carrot pudding. The combination of flavor from the carrots, pistachios, and cardamom make this an extra special treat. India these delicious little sweet carrots that I cannot find anywhere in the states, but I’m determined to locate them and recreate this heavenly dish!

Oy yoy yoy! This is a toughie, but I’ve narrowed it down to three amazing dessert EXPERIENCES:
    1. lemon tart from Perry’s on Fremont. I don’t think its on the menu anymore, but it changed me forever from being a strictly dark chocolate fan. I’ve pushed tart lemon deliciousness to the top of my dessert list. 2. the first time I had vanilla ice cream with vanilla BEANS in it was at Alpenrose Dairy, when I was a kid. Who knew those little tiny flecks of bean could turn plain vanilla into “oooooh! vanilla!!!” 3. a strawberry pavlova my friend Carie made for my wedding shower! The textural experience of light, crunchy meringue alongside fresh strawberries and cream….wow!

  18. 318

    My redvelvet cupcakes…. mmmmmmmmm
I dont know if it was the batter or the cream cheese icing… but the combo.
Wow. My friends still talk about it

    Lucy Bellwood says:

Living in a small town makes finding tasty treats after dark a challenge. Everything seems to close down at 5pm — even the restaurants! Luckily, after a late-night rehearsal for a theater production, some friends and I stumbled upon a tiny establishment that was still serving food at 11pm. I thought I was going to content myself with bar grub, but couldn’t resist when I saw the mysterious words “Skillet Cookie” on the menu. I had no idea what it meant, but I knew I had to try it.

Words failed me when I first saw the miniature cast iron skillet laid on the table before me. It contained a molten mass of cookie dough, steaming from the oven, perfectly chewy and crisp on the crust, meltingly delicious below. This vision was topped with a rapidly melting ball of house-made vanilla ice cream. I came to and realized I’d better act fast before it turned to liquid.

That first forkful will live forever in my mind — and on my tongue. I’ve always been a cookie-dough-over-cookies-any-day kind of girl, but this dessert gave me the best of both worlds. The hot, gooey chocolate went perfectly with the sweet, clean taste of the ice cream, which had an intoxicating aroma of fresh vanilla pods and that thick, sculpted taste one only gets in the freshly made stuff. I resolved to try and replicate it when I had the chance.

Now, several years later, my housemates clamor for Skillet Cookie whenever I happen to mention it in conversation. The timing, I’ve learned, is crucial — just the right amount of cookie crust to cap the bubbling dough beneath — but the effect is always one of pure bliss. I’ve certainly had more exotic desserts, but this one, for all its simplicity, is simply the most decadent.

{Feel free to email me if your interest is piqued. I have the recipe to hand and I’m happy to spread the love.)

When I was in a sorority in college we had something called Rush Dessert. It was an ice cream, fudge and cookie encrusted concoction that was mint and chocolate. We would wait all year for that one time during Rush week when we would share this with our prospective members. I can recall sampling the desserts at each of those final houses and making some decisions based on the yumminess factor! Thanks for sharing! Enjoy the day! Erin
